About this grain
Amaranth — ramdana, the seed that is not a grain. Lighter in the hand than kuttu and more forgiving in the dough.
How we mill it
Ground on granite, slowly and cool, the morning after your order. The whole grain goes through together and is packed within the hour, with the milling date printed on the pack.
How to store it
Airtight, away from heat and light. Best within 30–45 days for wheat and 3–4 weeks for millets. Refrigerating extends it; freezing extends it further. Let it come to room temperature before you knead.
