Here is a complaint we take seriously, because it costs people the very thing they switched for: someone moves from a packaged brand to freshly milled chakki atta, makes their usual dough exactly the way they always have, and the rotis come out hard. The natural conclusion is that the new atta is worse. It almost never is. It is thirstier, and the dough was made to the old recipe.

Why fresh chakki atta drinks more water

This is a matter of process, not marketing. A steel roller mill separates the grain and grinds the endosperm very fine; a stone chakki grinds the whole grain in one pass and leaves a coarser, more uneven particle size, with more of the bran intact. Coarser particles and more bran absorb more water, and they absorb it more slowly. The same weight of chakki atta simply needs more water to reach the same softness of dough — and it needs a little time to take that water up.

So if you add the amount of water that made a perfect dough from fine packaged atta, a chakki dough will come out stiffer than it looks. You roll it, it resists, the roti is dense, and it hardens fast once cooked. Nothing is wrong with the flour. The dough was under-hydrated.

The fix, in one knead

  • Add more water than you are used to, gradually. Go past the point where it feels right for packaged atta. A good chakki-atta dough for soft phulka is slightly stickier and softer than you may expect — tacky to the fingertip but not gluey.
  • Then rest it, covered, for twenty to thirty minutes. This is the step people skip. Resting lets the bran and coarse particles finish absorbing the water, and the dough that felt a touch too wet becomes exactly right. If you knead and roll immediately, you are fighting flour that has not finished drinking.
  • Knead it again briefly after the rest. A short second knead smooths it out. Now it rolls thin without cracking at the edges.

Warm water helps the dough come together faster; a small spoon of oil worked in at the end keeps the cooked roti soft for longer. Neither is essential. The water and the rest are the whole game.

By grain

The thirstier the grain, the more this matters. Khapli (emmer) is the most demanding — it takes noticeably more water and rewards a longer rest than common wheat. Millet doughs — jowar, bajra, ragi — behave differently again, because they have no gluten and are usually bound with hot water rather than kneaded cold; that is its own subject. For everyday Sharbati and Lokwan wheat, more water and a proper rest is all you need.

The one-line version

If your first batch from a new fresh atta comes out hard, do not judge the flour on it. Make the next dough wetter than feels correct, rest it half an hour, and taste again.
